Enjoy the free time and do something fun! See your friends, travel and have a good time! I am not saying that you can't do these things when you are in school, but time will be limited. You also might want to think about working some extra hours and saving up for school, every little bit helps.
A far as studying, each program is slightly different, so it is hard to get specific with exactly what to look over. You can start with anatomy of the upper body and limbs. If you want to start memorizing muscles: origins, insertions, actions and innervations that could be helpful, although depending upon the book your program uses, the wording may be a bit different. As far as getting organized stock up on whatever you use folders, notecards, binders etc during the back to school sales in August. Also if you are a visual learner, I would suggest buying a lot of colored pens, highlighters, markers or colored pencils for labeling and coloring in diagrams.
