Have you registered for this weekend's Medical Student Pride Alliance virtual conference this weekend (we are exhibiting)? It may help you connect with current medical students and residents who are willing to help other LGBTQA+ applicants find out about schools where they are attending. They may also give you insights into managing your application including interviews.
 
FWIW, I cannot envision you NOT getting accepted to U of Ill Chicago.
(Retired physician U of I Chicago class of 1977).

Your application is solid. If you want to strengthen it further, you could try to do more food pantry hours, but not strictly necessary.

As for your list: The difficult schools I think you might deal with are Washington, OHSU, Minnesota and Indiana (unless you have ties to Minnesota, Indiana, Oregon or 1 of the 5 states Washington covers). Because of the LGBTQ+ pathway at Washington, you probably have a better chance than the average OOS applicant there, but just worth considering.
