I'll try to avoid asking for unique information that will identify you in your work.
To your questions, you shouldn't have any trouble getting access to shadowing the surgeons. Take advantage of this, and don't try to twist other experiences like your doctor interviews from your research as clinical experience. It helps you in reflections about becoming a physician, but do the fundamental things.
Have you contacted S/NMA or any mentoring organizations focused on aspiring Black physicians or surgeons?
Reach out to the admissions professionals at schools closest to you. I don't know what your transcripts say for solid advice, but you need a plan to take the MCAT and a few references from professors.
